CAREER TALKS INSTANT ALUMNI - "Transmission & International Networking" by Maxime Moïse (2018 graduate), Chef of the Alliance by Institut Paul Bocuse.
Maxime Moïse took the time to talk to the new class of MCLI (Master Culinary, Leadership & Innovation) about his career path, from his status as a student at the Institut Paul Bocuse to his current position as Chef and Head of Strategic Partnerships at Alliance by Institut Paul Bocuse.
A true Lyonnais, Maxime has always been sensitive to the world of gastronomy. It is thanks to the women (his grandmothers and his nanny) who surrounded him during his childhood that he developed his love for cooking.
For Maxime, "cooking" is an inseparable synonym for "generosity", sharing and transmission. "To cook from the heart is to do something special.
From this passion came the obvious choice to study hospitality and cooking. After a technological baccalaureate in kitchen service and hotel management, he chose to join the Institut Paul Bocuse for a Bachelor's degree in Culinary Arts & Restaurant Management, then continued his studies with a Master's degree in Culinary Management & Innovation, also at the Institut.
Chef Moïse took advantage of this meeting with the MCLI to highlight the trend towards change in the sector, both in the kitchen and on the customer side. For Maxime, this awareness comes largely from the field, having worked in some of the great houses (Guy Savoie, Alain Ducasse, etc.) where he experienced excellence but also the frenetic pace that is difficult to envisage today throughout a career in the kitchen or restaurant business.
"The profession is changing, expectations are changing, restaurants are now waiting for CVs whereas previously sorting was the norm. People have changed their opinion of the profession and no longer want to "forget themselves" in their passion profession. This is why he believes the sector must continue to make a real change.
"The power is in your hands, in our hands to change cooking and mentalities about food".
Since 2017, Maxime has gone from freshly graduated alumni to chef referent of the Alliance by Institut Paul Bocuse.
For the record, the Alliance by Institut Paul Bocuse was created in 2004. Its main objective is to bring together the best higher education institutions and universities in the world, sharing the same educational values and the common goal of promoting and developing the hospitality, restaurant and culinary arts management professions.
Today, the Alliance has 25 partners in 21 countries: Bolivia, Canada, Chile, Colombia, Cameroon, Ecuador, Finland, France, Greece, Lebanon, Northern Cyprus, Malta, Mexico, Peru, Russian Federation, Singapore, South Korea, Taiwan, Thailand, Turkey and the United States.
Maxime's role within the Alliance is to develop this network of excellence (in the capacity of chef/consultant) and to ensure that the teams and facilities of the partner institutions are adapted to provide quality training. He is also in charge of creating new programmes or projects (e.g. the summer programme at the Institut Paul Bocuse for students from Alliance member universities/schools).
With this position, Chef Moïse achieves one of his ultimate professional goals : to transmit !
