"Choosing a theme, conducting a survey and writing a short article on the environmental, social and economic challenges facing the food service industry was the assignment given to 2nd year Culinary Arts students as part of their module on sustainable development management.

From responsible procurement to waste reduction, energy savings and the use of plants in cooking, the wide range of topics addressed by each group of students reflects the many challenges facing the food service sector.
