Chef David Fillat and Chef Fabien Brunet visit Woosong University
Since the lifting of the international health restrictions, the visits of the teaching teams to our partner schools have resumed. Our two pastry chefs, David Fillat and Fabien Brunet, were therefore sent on a two-week mission to Woosong University in Korea.
A partner since 2017, the University awards the Bachelor's degree in International Culinary Arts Management, and it is the role of the teaching teams, in particular Sophie Bellon - International Programme Director - to monitor the proper application of the distance learning courses and, when possible, also on site accompanied by Chefs from the Institut Paul Bocuse.
It was also an opportunity for our Chefs to deliver specific training courses. Chef Fillat passed on his know-how to the 1st year students on the theme of entremets, ending with a demonstration in front of high school students interested in the programme. As for Chef Brunet, he was in front of the 3rd year students to train them during one week in the making of ice creams and the other week in the composition of artistic sugar pieces.
They also enjoyed a guided tour of the city of Daejun (3 hours from Seoul) with Seungmin Lee (2020) - Executive Chef of Yann Couvreur's production laboratory, a privileged moment that they greatly appreciated!
This stay in Korea was rich in cultural exchanges and gastronomic discoveries, and was also an opportunity to salute the work of the French chefs who brilliantly deliver our school's programme to Korean students.
