For a two-week period starting this Monday 18 January, the 1st year Food Service students will take over the pop-up restaurant for lunch and dinner to participate in the "Food Challenge" supervised by Pascal Lamoussière.
Their objective: to understand the key factors and the qualitative and economic challenges facing a foodservice company by carrying out a management mission involving the design and development of a "bistro-style" offer.
Some fortunate guests on site were able to discover the "Aux beaux jours" bistro, thus launching the experiential concept with the projection of photos of a Parisian terrace on the walls, background music and a specific sound system, for a bistro atmosphere under the expert supervision of Paul Dalrymple! And as regards food, our students put together a lavish and authentic menu with Chefs Philippe Jousse and Alexandre Bois. Divided between the dining room and the kitchen, the students will switch roles next week to continue offering us a treat!
