Let's embark with the crew of Masters students for a gourmet and festive trip from 6 to 15 December at LDS
The 104 international students enrolled on the 2 Masters programmes delivered by Institut Paul Bocuse are getting ready to launch 15 pop-up restaurants from 6 to 15 December. More than 950 guests are preparing to experience a true world tour of culinary trends spread out over 6 days and 24 services!
The Master's in Culinary Leadership & Innovation programme (developed in partnership with the University of Applied Sciences of Haaga Helia in Finland) and the Master of Science in International Hospitality Management programme (in partnership with emlyon business school) both focus on projects. During this first semester, the project brings together students from both Masters, divided into 15 groups. The teams will take over the service laboratory, in turn, in order to provide their customers with an experience identical to that which they could have in a newly created restaurant in Lyon. Everything is designed, developed and built to test and approve their concepts before they are actually launched. This real-life proof of concept also includes the financial aspect, as the teams have to draw up and present a formal business plan.
In addition to the 104 students involved, more than 950 people will be invited to this full-scale test, orchestrated from A to Z by an event management team of 10 student volunteers. In addition to the general organisation, reception and booking management, they will be putting their concept of a pop-up bar into practice! This is a challenge that the highly motivated student team is taking up, in addition to the running of the programme.
As every year, the themes chosen by the different teams are varied, combining various culinary influences (Georgian, Indian, Italian, Peruvian, Cypriot, etc.) or are in the form of a single item of produce, all served in a fast casual, street food or more bistronomic atmosphere.
Of course, this event will be held in the strictest compliance with the sanitary regulations in force and a health pass will be required at the entrance.
