[MIHM FIELD TRIP] Our Master in Hospitality students conquering the West!

The American adventure began at the end of May for the 90 students from the MSc in International Hospitality Management run by Institut Paul Bocuse in partnership with emlyon business school. The whole group has been enjoying a true immersion experience, discovering the specific characteristics of the Hospitality industry in the United States.

The visit to Los Angeles and then Las Vegas is, in fact, the continuation of the programme which takes place abroad in the 3rd term. This is the first time that Institut Paul Bocuse has come to America, and we hope that it will not be the last!

To kick off this experience, the teaching team took the students to the finest hotels in Los Angeles and Santa Monica for five (very busy!) days. With stars in their eyes, they discovered the jewels of the hospitality industry such as the CHÂTEAU MARMONT, THE BEVERLY WILSHIRE, THE MAYBOURNE, HOTEL FIGUEROA, HOLLYWOOD ROOSEVELT HOTEL, BEVERLY HILLS HOTEL, etc. Hospitality being a vast universe, they also visited a very prestigious club: the JONATHAN TOWN CLUB to better understand the characteristics of this type of venue. Lifestyle chains were not forgotten with visits to MAMA SHELTER, W, among others. The resorts that are an integral part of the landscape, such as THE GARLAND, FAIRMONT MIRAMAR HOTEL & BUNGALOWS, welcomed our students. for a visit. Not forgetting the SHUTTERS ON THE BEACH in Santa Monica, where Christophe BARATON, the General Manager and Institut Paul Bocuse alumnus (2001), entertained everyone with a cocktail party that was appreciated by all!

During the visits, there were lively discussions with many questions from all sides concerning both operational and strategic aspects. The professionals we met answered openly, and we would like to thank them once again. Beyond the professional aspects, they also provided valuable life lessons to the students.

Divided into pairs, the group then set out to discover the Los Angeles F&B scene, exploring restaurants of all types, in order to carry out a survey of local trends and distinctive features for the CURIOSEATY platform deployed by Institut Paul Bocuse with the consulting firm FoodService Vision. The analysis of these experiences will be the subject of a future publication.

It was then time to take the bus to the Mojave Desert to reach Las Vegas, under what we might call... summer heat!

After settling into the student residences on the campus of our partner UNLV (University of Nevada Las Vegas) and being welcomed by Dean M. Stowe SHOEMAKER, classes began in a friendly yet studious atmosphere. Life on the UNLV campus is proving to be very exciting, as the facilities, particularly the sports facilities, from which the students benefit, are impressive.

The next step will be to explore the local F&B scene as part of the 3rd term project.

These are intense, exciting and enlightening weeks for our students; we wish them all the best for the rest of their adventures on American soil!
