Do you know "La Commune", the creative food hall in Lyon's 7th district? Opened in 2018 in a former carpenter's workshop covering 1500 m², this venue for shared experiences features kiosks offering various types of food, a cosy bar, a large terrace, an events space, and more.
The principle is simple: you help yourself to the products on the various stands and sit down at one of the tables provided to taste them and enjoy a great time in good company! This is the formula chosen since 2 June by Léa Sevenig, Ivan Uzel and Stanislas Bigot, three 3rd year Bachelor students, to test their new concept called "Focacc" for: fresh and local focaccias.
“The first few days went well, with more people than expected with the first challenge being to take part in a banqueting type event for 250 people.
We have received some positive feedback and customers are interested in the new concept we have brought to La Commune. And we hope to keep this momentum going for the next 6 months!
This choice of venue was made for several reasons. First of all, as students still at Institut Paul Bocuse, we needed to find a venue that would accept and encourage a 6-month pop-up restaurant. Secondly, La Commune already exists and has a loyal clientele that can come and test our concept. Finally, the venue allows us to test our concept without having to make major initial investments (the Food Court comes with an equipped kitchen in exchange for a fee).
After 6 months spent in the Food Court, we will now continue to work on the concept in the entrepreneurship specialisation to further develop our concept and vision.”
