This is a fresh and tasty recipe using seasonal produce: peas!
The high complex carbohydrate content of peas places them on the frontier between vegetables and cereals. However, their glycaemic index remains low and these young green seeds are very filling and contain a large amount of protein. Moreover, peas can be eaten in a variety of ways: whole peas, purees, soups, creams, custards, flours, etc. For example, raw and fresh, they go wonderfully well with a dish of cooked tagliatelle and provide an interesting crunch. After cooking, they can be used to prepare delicious soups, like the previous recipe! Finally, the more adventurous among you can even use them in desserts and play around with their mild, slightly sweet flavour.
