"Nutrition" recipe of the day : Sweet potato and quinoa roasts
The recipe of the day is based (among other ingredients) on quinoa. Quinoa is a pseudo-cereal (because it is not a grass plant, unlike cereals) originating from South America, where it has been grown for thousands of years. Our western ancestors used quinoa very little because its consistency did not allow them to make flour. Today, it is a much more widespread product that can be found mainly on the organic shelves of our supermarkets or in specialist organic shops.
Quinoa has a variety of nutritional benefits:
- It doesn't contain any gluten, which makes it an appealing food item for people suffering from celiac disease.
- It is a pseudo-cereal rich in proteins and iron and contains all the essential amino acids, making it a good alternative for vegetarians and vegans.
- It is easy to digest and has a fairly low glycemic index.
- It is a good source of vitamins and minerals.
Different varieties of quinoa exist: red, white, black, etc. There is something for all tastes!
